Mixed fish and seafood broth
This dish reminds of when I was a young girl and my grandmother used to make the most delicious fish soup.
Somehow mine is not quite like hers but is good nonetheless.
Ingredients for 4 people
A kilo of mixed white fish, some crab claws, 4 or 5 king prawns, a few calamari, 4 or 5 fresh tomatoes finely chopped, parsley, garlic, half an onion finely chopped, extra-virgin olive oil, 300g of Sardinian Fregula.
Fry the onion, garlic and parsley in extra-virgin olive oil and slowly add the fish starting with the biggest pieces, throw in the tomato and gently mix it without breaking the fish, cover with water, add the prawns and let it boil down.
Sieve the broth and cook the fregula until ready, cooking time varies according to the size of the fregula, for a medium size it normally takes 8-10 minutes. You can choose to add the fish and seafood to the dish and eat it together or you can enjoy the broth with the fregula first and the fish and seafood to follow.
